Broccoli and cauliflower salad bowl

I know I used to post a lot more recipe's before (two every week!), but it stressed me out sometimes and after a while I just didn't enjoy it as much. Cooking should be fun! It's something I do to calm down. Therefore I'm gonna post recipe's when I feel like it instead.

//  Jag vet att jag delade med mig av fler recept förut (två varje vecka!), men det gjorde mig stressad ibland och efter ett tag tyckte jag inte att det var lika roligt längre. Matlagning ska vara roligt! Det är något jag gör när jag vill varva ner. Därför tänker jag bara lägga ut recept när jag känner för det. 



Here's a simple, healthy and delicious (the three words I want the majority of my recipe's to have) dish I made last week. I made a big batch of the baked broccoli, cauliflower, red onion and kale so I had lots of it in the fridge for the rest of the week. Work perfectly to put in stews or with pasta if you want to change it up.

//  Här är en enkelt, nyttigt och supergott (de tre orden jag vill att majoriteten av mina recept ska uppfylla) lunch jag gjorde förra veckan. Jag gjorde en står plåt med broccoli, blomkål, rödlök och grönkål så att jag hade massa i kylen resten av veckan. Funkar jättebra att ha i grytor eller till pasta om man vill göra något annat. 


Ingredients
- Broccoli
- Cauliflower
- Red onion
- Kale
- Sun dried tomatoes
- Quinoa
For the hummus
- 250 g chickpeas
- 3 Tbsp tahini
- 3-5 Tbsp water
- 3-5 Tbsp lemon juice
- 1 garlic clove
- Salt
- Black pepper

1. Turn the oven on 200°C.

2. Chop the broccoli, cauliflower and red onion (the onion into wedges). Put on a baking tray and drizzle over some olive oil and season with salt and black pepper. Place in the middle of the oven for around 15 minutes. Stir around after 10 minutes and put the kale on the veggies.

3. Cook the quinoa according to the instructions.

4. Chop the sun dried tomatoes and mix together with the baked veggies and quinoa in a bowl.

5. To make the hummus, simply mix a ingredient in a blender. Add as much or as little water as you want to, it depends on how you want the consistency to be. Start with a little bit and add more as you go.

6. Add the hummus to the bowl and serve with some lebanese bread. Done!
