Tahini pasta

Monday, 22 May 2017

I would never give up pasta. I don't care what different diet says.

I. Want. My. Pasta.

Therefore, I'm bringing you another delicious pasta recipe this Monday!

I love having tahini dressing over my salads, so when I got the idea to try to use it as a pasta sauce I got super excited. It turned out so good! The pasta got creamy but not heavy. DELISH! You could use any veggies you'd like really. If you're making food to a meat-eater I think this would be great to make with some sort of "fake chicken" from Oumph, Vegme, Fry's or Gardein (just to mention a few).

DELISH!

Ingredients
- Pasta of choice (250 g)
- 1 red onion
- 2 garlic cloves
- 2 carrots
- 1 red bell pepper
- 2 large bunches of chopped kale
- 1 dl tahini
- 1/2 lemon
- Salt
- Black pepper

Tahini pasta

1. Cook the pasta according to the instructions.

2. Finely chop the red onion and garlic. Peel and chop the carrots and chop the red bell pepper and kale as well.

3. Saute the red onion with a little bit of water in a saucepan until soft. Add in the garlic, veggies and greens with some more water. Let cook for a couple for minutes on a medium to low heat.

4. Drain the pasta.

5. Mix the tahini and juice from half a lemon with some salt and black pepper in a small bowl. Add the pasta and tahini dressing to the pan with the veggies. Stir around until everything's coated with the dressing. Tahini pasta – sorted!
