Sun-dried tomato and broccoli pasta

Don't get fooled by the pictures, this pasta is a lot creamier than it looks! I was really craving pasta with sun-dried tomatoes, so I threw this together, which turned out really good!

The nutritional yeast gives it a bit of a cheesy flavour. If you're a vegan you NEED nutritional yeast in your life! I'm a bit obsessed. It's also a great source to B-vitamins and some brands even have B12 added to it. Great!

Ingredients
- Pasta of choice
- 2 dl frozen broccoli
- 150 g sun-dried tomatoes
- 250 ml plant based cream
- 3 Tbsp nutritional yeast
- 2 garlic cloves
- 1 yellow onion
- Sea salt
- Black pepper

Sun-dried tomato and broccoli pasta

1. Cook the pasta according to the instructions together with the broccoli. Drain when done and put aside.

2. Finely chop the onion and garlic. Saute the onion with a little bit of water in a pot until soft, then add the garlic.

3. Chop the sun-dried tomatoes. Add to the pot together with the plant based cream (I used the one from Oatly), nutritional yeast, salt and black pepper after taste and let boil on a medium heat for a couple of minutes.

4. Add the pasta and broccoli to the pot and mix together until the pasta is coated in the creamy sauce. Sprinkle over some more nutritional yeast for some more cheesy flavour!
