Raw carrot cake bliss balls

It's Easter next week. That means loads of treats! These carrot cake balls are a perfect treat and a more healthy option if you want to take a break from refined sugar (even though I think you should treat yourself with that as well during holidays if you want to).

//  Nästa vecka är det påsk. Det innebär massa av godsaker! Dessa raw bollar med smak av morotskaka är ett perfekt nyttigare alternativ om man vill ta en paus från raffinerat socker (även om jag tycker att kan ska unna sig det vid påsk om man vill). 



I brought these to the brunch I went to yesterday, and people seemed to really like them! I personally love having chunks of nuts in them, but my friend Emilio said he didn't like that. So if you're like him, just blend the ingredients in the mixer a bit more.

//  Jag tog med de här till gårdagens brunch och de verkade tycka om dem! Personligen gillar jag att ha större bitar av nötterna i bollarna, men min vän Emilio sa att han inte gillare det. Så om ni är som honom, mixa bara ingredienserna lite till. 


Ingredients
- 2 carrots
- 10 dates
- 100 g walnuts
- 1/2-1 dl oats
- 2 tsp cinnamon
- Shredded coconut

Carrot cake bliss balls (ca 15 balls)

1. Grate the carrots and pit the dates.

2. Put all ingredients in a food processor and mix until it's like a dough (with a bit of chunky bits from the walnuts).

3. Make into balls and roll in some shredded coconut. Let sit in the fridge for at least one hour. Take out 10 minutes before serving.
