Peanut tofu noodles

I always get super excited when I come up with a new recipe in the kitchen! The other day I experimented a bit and made this peanut tofu noodles. Can we take that again. Peanut. Tofu. Noodles. I know! Sounds delish, right?

And so it was. It got super creamy and it was also really quick to make. Around 10-15 minutes. I tried it out with some rice noodles that the guy in a little asian shop recommended, but I think this would be good with rice as well if you prefer that.

//  Och det var det också. Den blev superkrämig och gick också fort att göra. Tog runt 10-15 minuter. Jag testade att göra med risnudlar som killen i en liten asiatisk butik rekomenderade, men jag tror det här skulle vara gott med ris också om man föredrar det. 


Ingredients
- 200 g firm tofu.
- Rice noodles
- Broccoli
For the peanut sauce
- 0,5 dl peanut butter
- 0,5 Tbsp tomato paste
- 1 Tbsp sriracha sauce
- 1 tsp ginger
- 1 garlic clove
- 2 pinches of salt
- 1 dl water


Peanut tofu noodles

1. Put the rice noodles in a bowl and pour over hot boiling water and let them cook while you make the rest of the dish.

2. Boil the broccoli for a couple of minutes and put aside.

3. Mix all ingredients for the peanut sauce in a bowl. Pour a tiny little bit of water in a frying pan before adding the sauce to heat it up on a medium to low heat. Add more water if needed.

4. Chop the tofu in to cubes and add to the frying pan and stir around.

5. Drain and rinse the rice noodles and add to the pan as well. Make sure everything is coated in the peanut sauce.

6. Serve with the broccoli and sprinkle over some chili flakes. Done!
