Overnight oats in two ways

This weekend I made some new variations of overnight oats. This is a perfect breakfast for you who's always in a rush in the morning and don't have time to make breakfast. You simply make these the evening before, put them in the fridge and voila – you've got a filling, healthy and delicious breakfast ready to eat in the morning! It's also great as a snack in the afternoon.

//  I helgen gjorde jag lite nya varianter av overnight oats. Det här är en perfekt frukost för den som alltid har brottom på morgonen och inte har tid att göra frukost. Du gör helt enkelt de här kvällen innan, stället in de i kylen och voila – du har en mättande, nyttig och god frukost redo att ätas på morgonen! Det är också perfekt som ett mellanmål på eftermiddagen. 

I made one with coconut and raspberry and the other one with chocolate, peanuts and banana. I honestly can't pick a favourite because they were both SO good! The coconut and raspberry one is a bit fresher though and perfect for summer time. But I mean, who can resist chocolate?

//  Jag gjorde en med kokos och hallon och den andra med choklad, jordnötter och banan. Jag kan helt ärligt inte välja en favorit för båda var SÅ goda! Den med kokos och hallon var lite fräschare och perfekt för sommaren. Men jag menar, vem kan motstå choklad?

Som vanligt, berätta gärna om ni provar på att göra de själva!


Ingredients

For the chocolate one: 
- 1 dl oats
- 1 Tbsp chia seeds
- 1 Tbsp raw cacao powder
- 1,5 dl oats milk (or other plant based milk)

For the Raspberry and coconut one:
- 1 dl oats
- 3 Tbsp shredded coconut
- 1,5 dl coconut milk (or other plant based milk)
Raspberry chia jam:
- 1 dl raspberries (if frozen, let defrost)
- 1 Tbsp agave syrup
- 2 Tbsp hot water
- 2 Tbsp chia seeds

Chocolate, peanut and banana overnight oats

1. Mix all ingredients in a jar, glas or bowl. Cover with a lid or plastic and put in the fridge over night.

2. Top with peanuts and banana. You could also have some peanut butter, but I didn't have any at home.

Raspberry and coconut overnight oats

1. Mash the raspberries and mic with the other ingredients for the chia jam in a bowl and let sit for 2-3 minutes.

2. Mix the oats, shredded coconut and coconut milk in another bowl.

3. Layer the coconut oats and the raspberry chia jam in a jar, glas or bowl. Cover with a lid or plastic and put in the fridge over night.

4. Top with some whole raspberries and shredded coconut.
