Kale and avocado pesto

I experimented a bit when making this recipe. I was really craving pasta. There was one ripe avocado laying in the kitchen. Why not try to make a pesto? I had made pesto on avocado before but for that recipe I used more traditional pesto ingredients – basil and pine nuts. I had no of those ingredients at home but I did have sunflower seeds and some kale that needed to be used up.

Jag hade gjort pesto på avokado förut, men då använde jag mer klassiska pesto-ingredienser – basilika och pinjenötter. Jag hade ingen av de ingredienserna hemma. Dock hade jag solrosfrön och lite grönkål som var tvungen att användas. 


I toasted the sunflower seeds before mixing all ingredients in a blender. It took a couple of minutes to get it smooth, but after a while it looked the way I wanted it to look. A perfect way to get you greens in! You could probably make this on spinach as well. So simple to make and perfect dinner for the middle of the week.

Ett perfekt sätt att få in mer grönt i maten! Man skulle säkert kunna göra det här på spenat också. Så enkelt att göra och perfekt som middag mitt i veckan. 


Ingredients
- Pasta of choice
- 3 handfulls chopped kale
- 1 avocado
- 1 dl sunflower seeds
- 2 garlic cloves
- 1 dl nutritional yeast (to give it a bit of a cheesy flavour and it's also packed with vitamin B)
- 1,5-2 dl water
- Sea salt
- Black pepper

Kale and avocado pesto

1. Cook the pasta according to the instructions.

2. Toast the sunflower seeds on a medium high heat in a dry pan until they're a bit golden.

3. Put all ingredients in a mixer and blend it all up for a couple of minutes. Add more water if it's to thick.

4. Drain the pasta. Heat up the pesto in the pot you cooked the pasta in. Get the pasta in the pot again and mix until everything is coated in the pesto. I only cooked pasta for one portion and saved the rest of the pesto in a container. It will last up to one day in the fridge.
