Cauliflower tacos

Friday means tacos! At least for the majority of Sweden. I thought I would try out something different this week though. I've seen people making different types of tacos with cauliflower, so I thought I'd try it out myself. 

//  Fredag betyder tacos! I alla fall för majoriteten i Sverige. Jag tänkte att jag skulle på mig en ny variant den här veckan. Jag har sett många göra olika typer av tacos med blomkål, så jag ville såklart prova det själv. 


It turned out really good! I think I've got a thing for cauliflower at the moment. The avocado sauce I made was also delicious. Super simple to make as well. You will smell loads of garlic though, just saying!

//  Det blev riktigt bra! Jag tror jag har en grej för blomkål för tillfället. Avokadosåsen blev också himla god. Superenkel att göra dessutom. En liten varning dock – du kommer lukta väldigt mycket vitlök!

Ingredients
- Cauliflower
- Paprica powder
- Sea salt
- Chili flakes 
- Olive oil
- Carrots 
- Chickpeas 
- Tortilla bread
For the avocado sauce:
- 1 ripe avocado 
- 3 Tbsp Oatly iMat Fraiche (or other plant based creme fraiche) 
- 1 garlic clove
- Sea salt
- Black pepper

Cauliflower tacos

1. Turn the oven on 200°C. Cut the cauliflower head into florets and put on a baking tray. Drizzle over some olive oil and sprinkle on paprica powder, sea salt and chili flakes after taste. Make sure everything is well coated. Put in the oven for about 30 minutes. Stir around half way through. 

2. Take a peeler and peel the carrots into super thin slices. 

3. Drain and rinse the chickpeas. 

4. Mash the avocado in a small bowl. Add the creme fraiche and, finely minced garlic, sea salt and black pepper. Mix well together. 

5. Put everything together in a tortilla bread – Done!
