Spicy rice in a pot

One thing I loved doing in London was going on food markets – Camden Market, Sunday up market on Brick Lane and Borough Market. I love seeing how passionate the people behind the stalls are (most of them at least) and there was always something new to try out.

One time I tried this thing called jambalaya in a Jamaican stall. It's simply a rice mixture. Simple but delicious! So this week I tried to make it myself at home. It's probably, or most definitely, not the same thing, but it turned out really good!

//  En gång provade jag något som kallas för jambalaya i ett stånd med Jamaikansk mat. Det var en typ av risblandning. Enkelt med gott! Jag provade på att göra denna rätt hemma nu i veckan. Det är förmodligen, eller definitivt, inte samma sak, men det blev riktigt bra!

Ingredients
- 1 yellow onion
- 3 garlic cloves 
- 5 dl chopped celery 
- 3 large tomatoes 
- 1 can of red kidney beans
- 1 Tbsp smoked paprika 
- 1,5 Tbsp hot sauce (I used sriracha)
- Salt and black pepper after taste
- 1 vegetable cube stock
- 4 dl rice
- 10 dl water

Spicy rice in a pot

1. Chop the onion, garlic and celery and let saute in a big pot with a little bit of water for 3-5 minutes. 

2. Roughly chop the tomatoes and add to the pot as well and saute for another 3 minutes. 

3. Add in the smoked paprika, sriracha, salt and black pepper and stir around. After that it's time to add the rice and water. Crumble down the vegetable cube stuck and stir around. Let simmer on a low heat under a lid for about 20-30 minutes. 

4. Drain and rinse the red kidney beans and stir in with the rice. Serve just as it is or put it in a tortilla bread!
