Couscous with roasted veggies

This recipe turned out so much better than I though it would! It's often the most simple things that are delicious according to me. The roasted veggies gave the dish amazing flavours and to mix in the raisins took it to another level!

Of course I had it with some hummus, because hummus is life and I'm addicted. When I lived in England, there was always a huge variety of different types of hummus in all grocery stores. There is not as many to choose from in Sweden, but I really like the one from Sevan.

//  Självklart hade jag lite hummus vid sidan av, för hummus är livet och jag är beroende. När jag bodde i England fanns det alltid massa olika typer av hummus att välja bland i alla mataffärer. Det finns inte lika stort utbud i Sverige, men jag gillar verkligen den från Sevan. 

Nej nu måste jag verkligen sluta och springa iväg till pendeln. Ha en fin dag!

Ingredients
- Red bell pepper
- Carrots 
- Cherry tomatoes 
- Red onion
- Garlic 
- Chickpeas 
- Kale
- Couscous
- Vegetable cube stock
- Paprika powder 
- Sea salt
- Black pepper
- Olive oil
- Raisins

Couscous with roasted veggies

1. Start out by putting the oven on 200°C.

2. In a bowl; put in one part of couscous and two parts of boiling water. Crumble down the vegetable cube stock (I recommend one whole cube for 2 dl couscous), stir around and put a plate over the bowl and let the couscous swell. 

3. Roughly chop the veggies and the red onion into wedges. Crush the garlic cloves (about one clove per person) and put on a baking tray together with the other veggies. Drizzle a little bit of olive oil and coat the veggies with some paprika powder, sea salt and black pepper after taste. Put the baking tray in the middle of the oven for about 20 minutes and stir around half way through.

4. In the mean time – drain and rinse the chickpeas and chop up the kale. 

5. When the veggies has been roasted, take away the garlic cloves before you mix the veggies with the couscous, chickpeas, kale and raisins. Sorted!
