Red cabbage salad

You might have seen that I made this salad for Christmas. It might not look as much, but trust me - it's so good! Everyone really liked this one, so I thought I had to share it with you guys as well.

Ni kanske såg att jag gjorde den här salladen på julafton. Det kanske inte ser ut som mycket, men tro mig - den är så god! Alla gillade verkligen den här, så jag tänkte att jag måste dela den med er också.

The three core ingredients are red cabbage (which is so cheap at the moment), carrots and seeds. At Christmas I used roasted sunflower seeds, but when I made it this week I used pumpkin seeds. I think I prefer sunflower seeds though, but both works. 

Perfect as a side dish or a large bowl for lunch!

De tre basingredienserna är rödkål (som är så billigt just nu), morötter och frön. På julafton hade jag i rostade solrosfrön, men nu i veckan gjorde jag den med pumpakärnor. Jag föredrar nog solrosfröna, men båda funkar. 

Perfekt som en sidorätt eller en stor skål till lunch! 

Ingredients
- 1/4 of a large red cabbare 
- 3-4 carrots 
- 1 dl pumpkin seeds or sunflower seeds
Dressing: 
- 2 tsp mustard 
- 1 tsp agave syrup
- 2 Tbsp white wine vinegar 
- 2/3 dl olive oil 
- A pinch of sea salt 
- A pinch of black pepper

Red cabbage salad

1. Shred the cabbage. Peel and shred the carrots as well. Put in a large bowl. 

2. In an hot dry pan, roast the seeds until they got a bit of colour. Put a side and let cool a bit. 

3. Mix all ingredients for the dressing in a small bowl. Pour over the salad and mix so that everything is covered. Mix in the seeds. Done!
