Kale & chickpea salad

I'm making this as a side dish for the Christmas table this year. Kale is perfect for Christmas and it's also cheap at the moment. The roasted chickpeas makes the salad more filling and gives it some texture. The hero of it all - the tahini dressing!

Jag kommer gör den här som en del till julbordet i år. Grönkål är perfekt till julen och det är också billigt för tillfället. De ugnsrostade kikärtorna gör salladen med mättande och ger den lite textur. Hjälten i denna rätt - tahini dressingen!

I've made tahini dressing before using tahini, lemon juice, some salt and pepper. This time I made it with agave syrup as well since I've heard that tahini works with sweet things. I can confirm that it definitely does! It was perfect with this salad. I could eat this just by it's own (I'm also thinking it would be great with some couscous or quinoa).

Jag har gjort tahini dressing förut med tahini, citronjuice, lite salt och peppar. Den här gången hade jag även i agave syrup då jag hört att tahini funkar bra ihop med söta saker. Jag kan bekräfta att det verkligen gör det! Det var perfekt till den här salladen. Skulle kunna äta den för sig självt (tänker även att det skulle vara gott med couscous eller quinoa).

Ingredients
- 200 g kale 
- 1 can chickpeas 
- 1 Tbsp Paprika powder 
- 1 tsp Sea salt
For the dressing
- 0,5 dl tahini 
- Juice from half a lemon 
- 1,5 Tbsp agave syrup
- 1 tsp garlic powder 
- A pinch of sea salt
- A pinch of black pepper

Kale & chickpea salad

1. Put the oven on 225°C. 

2. Drain and rinse the chickpeas. Spread them out on a baking tray, add the paprika powder and sea salt and make sure everything is coated. Put in the middle of the oven for about 15-20 minutes, shaking them around half way through. 

3. Put the kale in an pan with some water to let them softened a bit. Not too much though, we still want them crunchy. Put in a bowl. Together with the chickpeas. 

4. Put all the ingredients for the dressing in a small bowl and mix together. Transfer to the big bowl and mix until the kale and chickpeas are coated with the dressing. Ready to serve!
