Simple creamy pasta

Today has been a good day! Had fun at work, had a nice lunch with my boss, went to talk with my girls at Espresso House before I went home and got surprised with some "lussebullar" (aka saffron buns) that my mom had made. Great start to the weekend!

Idag har varit en bra dag! Hade kul på jobbet, hade en trevlig lunch med min chef, gick till Espresso House och pratade med mina tjejer innan jag gick hem och blev överraskad av min mamma som bakat lussebullar. Bra start på helgen! 


Friday means that I share another recipe with you guys. Today I thought we'd go for something simple. This creamy pasta is quick and easy to make. It's pasta. It's hard to make something non-delicious with pasta in my opinion. I always enjoy pasta!

Fredag innebär också att jag delar ännu ett recept med er. Idag tänkte jag att vi kör på något simpelt. Den här krämiga pasta är så enkel och snabb att göra. Det är pasta. Det är svårt att göra något som inte smakar bra med pasta om du frågar mig. Pasta är alltid gott!

Ingredients
Pasta of choice
Mushrooms
Frozen peas
Fresh spinach 
Red onion 
Garlic 
Plant based cream (I used Oatly iMat, but the soy cream from Alpro works just as good)
Salt and black pepper
Optional: Nutritional yeast 


Simple creamy pasta

1. Cook the pasta according to the instructions and cook together with the peas. 

2. Finely chop the red onion and garlic. Sauté the onion in a little bit of water for a couple of minutes until soft. Add in the garlic and stir around. 

3. Chop the mushrooms and sauté with the onion and garlic. Add in the spinach when the mushrooms has been cooked. 

4. Pour in the plant based cream together with some salt and black pepper after taste. Stir around and let cook on a medium heat for a couple of minutes. 

5. Drain the pasta and the peas and put back in the pot. Transfer the sauce to the pot and mix together until the pasta is covered. Sprinkle on some nutritional yeast to get some B-vitamins and a cheesy flavour. Ready to serve!
