Creamy artichoke and broccoli pasta

I've been wanting to try out making a creamy pasta sauce made on cashew nuts ever since I saw Kalel doing it on YouTube. The cashews are filled with magnesium and iron and by adding nutritional yeast (a vegan must-have) it also gives the sauce a cheesy taste.

I mean, what's not to like about a sauce like that?

Jag har velat testat att göra den här krämiga pasta såsen gjord på cashewnötter ända sen jag såg att Kalel gjorde det på YouTube. Cashewnötterna är fyllda med magnesium och järn och när man har i näringsjästen (ett veganskt måste) ger det dessutom såsen en ostig smak.

Jag menar, vad finns det inte att gilla med den här såsen?


I definitely like this sauce and it wasn't hard to make. It became a bit thicker than I wanted though, so next time I'm going to add a bit more milk (I've already added more than I used to the recipe down below, but feel free to add more if desired).

Jag gillar verkligen den här såsen och den var inte svår att göra. Den blev dock lite tjockare än jag ville så nästa gång ska jag ha i lite mer mjölk (jag har redan lagt till lite mer än vad jag använde i receptet, men ha i mer om det skulle behövas). 


Creamy artichoke and broccoli pasta

1. Start out with soaking the cashews about 2-3 hours before you start cooking. This will make them softer and easier for the food processor to blend.

2. Make the sauce by putting the cashews, plant milk (I used oats milk but I think soy milk could go well with this too), garlic, nutritional yeast, chili flakes, salt and the juice from the lemon into a food processor. Blend until you get a creamy sauce and put aside. 

3. Cook the pasta according to the instructions but add the spinach to the water about 30 seconds before you drain the pasta.

4. Chop the broccoli and let boil in hot water for a couple of minutes before you drain them.

5. Chop the red onion finely and drain the artichokes and chop into big chunks. 

6. Saute the red onion until soft, then add the artichoke and broccoli. Pour in the sauce and let heat up on a low temperature before adding the spinach and pasta. Stir all together until the pasta is evenly coated in the sauce. 

7. Serve on a plate or in a bowl. Sprinkle over a bit more of nutritional yeast and chili flakes if desired. Done!
