Filling salad with kale and red kidney beans

Monday and I do not have any anxiety over the fact that the weekend’s over. I’m excited to go to the internship and start a new week! I listened to the Swedish podcast “Den Friska Vargen” with Ida Warg and Victor Frisk this morning when I was out running. In this episode they were talking about money and how they earn money working with social media. They also talked about how important it is to work with something that you really enjoy. If that’s working in a retail store, in a office or as a freelancer doesn’t matter – as long as YOU are happy! That’s definitely something that drives me and that I strive to achieve.

The only con about working today is the fact that it’s so sunny outside! Hopefully it will stay like this till I’ve finished for the day. When the sun comes out like this, I love making different kinds of salad. It’s quick and easy to make and you can also take it with you outside and eat cold.

This salad is easy and quick to make, but most importantly tasty and filling! The crunch of the kale together with the soft red kidney beans goes perfectly together – at least in my opinion.

Filing salad with kale and red kidney beans

1. Put 1 parts couscous in a bowl and pour in 2 parts of boiling water. Take the vegetable stock cube and crumble in to the bowl and mix together with the couscous. Put a lid or plate over so that the bowl is covered. Let the couscous do it’s magic while fixing the rest of the dish.

2. Drain and rinse the red kidney beans.

3. Rinse the kale as well and massage it. Yep you heard me right, massage it. It will make the kale softer and easier to eat.

4. Chop up the courgette and cherry tomatoes. Mix everything in a bowl.

5. Take the couscous and stir in to the bowl.

6. Squeeze over a generous amount of lemon. Season it with some paprika spice and black pepper and mix all together.

7. Put in a container, bring outside and enjoy it in the sun (or just have it inside)!

  1. Don't you think it's unecessary to put up that much food on the plate? Do you throw it away? Cus I guess you don't eat all of that when you're that skinny
