Super quick couscous salad

This couscous salad is definitely one of my go-to meals. It’s super quick and easy to make and so good! The secret is to have a vegetable stock cube in the water when making the couscous. It gives a lot of flavour and makes a huge difference! 

You can either have this as a lunch or dinner, but it does also work perfectly as a smaller side dish when having a bigger feast with friends or family.

Super quick couscous salad

1. Put 1 parts couscous in a bowl and pour in 2 parts of boiling water. Take the vegetable stock cube and crumble in to the bowl and mix together with the couscous. Put a lid or plate over so that the bowl is covered. Let the couscous do it’s magic while fixing the rest of the dish.

2. Cut the spinach, parsley, cherry tomatoes and courgettes.

3. Drain and rinse the chickpeas.

4. By this time, the couscous should be done. Take of the lid/plate and take a fork to stir the couscous around.

5. Mix in the greens and chickpeas to the bowl.

6. Squeeze over a generous amount of lemon. Season it with some black pepper and dried mint (salt isn’t necessary because of the vegetable stock cube) and mix it together.

7. Lunch/dinner/side dish, whatever you want it to be - Sorted!
