Mixed platter with oven baked sweet potatoes and aubergine

One thing I always have in my fridge is hummus. I’m lazy though and don’t make my own hummus, but Tesco’s organic one is really good so that’s the one I usually go for.

I love making mixed platters like this one with hummus and other things that goes well with it. Today I made one with sweet potatoes and aubergine baked in the oven with some salad.

The amount of ingredients does of course depend on how much you want or for how many people you’re making it for.

Mixed platter with oven baked sweet potatoes and aubergine

1. Cut the sweet potatoes in to long stripes. Try to cut them so they’re about the same size.

2. Dress the sweet potatoes in a tiny bit of coconut oil and have on some salt, pepper and paprika powder.

3. Cut the aubergine in slices. Make sure you don’t cut them too thin, as they will get smaller in the oven.

4. Put the sweet potatoes and the sliced aubergine on a baking tray in a pre heated oven on 200 degrees/gas mark 6. Flip the aubergines after a couple of minutes and stir around the sweet potatoes.

5. While it’s baking in the oven you can make your salad. Cut some spinach and cherry tomatoes and add some rinsed chickpeas. Mix everything with some salt and pepper and a squeeze of lemon.

6. Take out the aubergine from the oven but let the sweet potatoes bake for a couple of more minutes.

7. When the sweet potatoes are done its time put everything on a plate, and don’t forget to put that incredible hummus in the middle (I sprinkled some paprika powder over it).

8. Take your Instagram shot, put your phone away and enjoy!
